Possibly not the most well-thought out of plans

I will start this off by telling y'all that on Monday, I got home and said, "Oh! I left my onions at work."

One of my co-workers (who also farms (I mean also in the "in addition to working with me" sense and not in the "News flash! I am a farmer," sense.)) sells bags of Vidalia onions every year. They are trucked in from Vidalia County, Georgia, and he drives down to Fayetteville, NC to pick them up and delivers them to us at work. The are $10 for a 10 lb. bag. This is a reasonable price, and I do like Vidalia onions. But, the thing is, I like onions in things. Not plain. So, I don't know if I can use them all. I may have to chop and freeze. I am taking recipe suggestions.

I think stews use a lot of onionas. Or at least the way my mom makes chili & veal ragu. I also use at least one to make italian wedding.

what about beer batter onion rings? Yum. you can roast them, stew them, chop them up and freeze them, make steak sandwiches with them, put them in tomato sauce, dice them up and make omelettes, make potato onion gratin (i have a great recipe somewhere if you want it)... oh, there's just so much you can do!

I love vidalia's. I like Moniques idea. Vidalia's aren't really great stew onions. Salads are good and then sauteed with peppers and mushrooms. And Meg's idea for pizza! Yum!
